Lamb Kibbee in Pita Pocket with Cucumber Yogurt Sauce
To make yogurt sauce, mix together:
1 pint plain yogurt
1 small cucumber, peeled, deseeded, and diced
1 tsp. capers
A few mint leaves, chopped fine
A dash of tabasco sauce
To prepare kibbee, use one patty for each sandwich and either brown in a saute pan over medium heat, or cook under a broiler, turning occasionally to ensure even cooking. Kibbee takes about five minutes to cook; avoid overcooking as it dries the product. Also, it can be cooked frozen.
Heat pita pockets briefly in oven, then stuff the pita with kibbee, add lettuce and tomatoes if desired, and top with sauce.
